Chris Cognac's Gooey Machego Cheese

    Chris Cognac's Gooey Machego Cheese Wrapped in Serrano Ham or Proscuitto

    6 oz Machego cheese cut into 2 inch lengths
    6 slices Proscuitto or Serrano ham thin sliced
    2 tbs olive oil
    1 tsp red pepper flakes
    2 cloves garlic sliced
    1. Wrap cheese in proscuitto and arrange in a 6 inch tapas or oven safe metal dish.
    2. Drizzle with olive oil, sprinkle red pepper flakes and garlic over dish and heat in a 450 degrees oven for 5-6 minutes until oil starts to bubble and cheese inside gets gooey, then remove from heat.  Let cool for approx 2 minutes.
    3. Serve with crusty bread…the best part is sopping up the olive oil on in the pan with the bread.  If you want to add a bit of flavor and have some “linguica sausage” on hand, chop it up and add it to the oil before cooking…wow!
