Betty Groff's Sweet Potato Pie
Pastry for one 9-inch pie:
1 ¼ cups cooked, mashed sweet potatoes (or yams)
1/3 cup light brown sugar, packed
2 tablespoons honey
1/3 teaspoon salt
¼ teaspoon nutmeg
½ teaspoon cinnamon
2 eggs beaten
2/3 cup milk
2 tablespoons melted butter
½ cup grated cocoanut (optional)
½ cup broken pecan peaces (optional)
Prepare pastry and line pie pan. Chill while making the filling.
Combine sweet potatoes, brown sugar, honey, salt and spices in a large bowl. Mix together eggs, milk, and butter and stir into sweet potato mixture. Fold in the cocoanut and nuts. Pour into chilled pastry shell and bake in preheated 400 degree oven for ten minutes. Reduce heat to 350 degrees and continue baking for 40 minutes or until a knife comes out dry when inserted in the center. Serve chilled or room temperature with ice cream or whipped cream.
