Harrisburg - Marel Raub of Duncannon, Perry County took home the blue ribbon and $500 from among 37 entries for her Pecan Sticky Buns on Friday, Jan. 14, at the 2011 Pennsylvania Farm Show.
The sticky bun contest judges were Deputy Agriculture Secretary Doug Kilgore, Debbie Bender, Dr. Bill Henning, Sonnie Allison and Debra Ellis all agreed that the Raub's Pecan Sticky Buns were the best of the bunch.
"A lot of people know how to make good sticky buns," said Kilgore. "And these are exceptional."
The sticky buns were judged on appearance, texture, consistency, taste and ingredients. Requirements also include the confections be placed in an eight by eight-inch disposable pan.
"I altered the family recipe," Raub said when asked about the winning recipe.
Second place and $100 went to Sarah Harris of Pricetown, Berks County, a first time exhibitor with her Carmel-Pecan Sticky Buns. Third place and $50 went to Jim Harper of Pennsylvania Furnace, Centre County. Fourth place went to Shelley Pokrivka of Seven Valleys, York County, while fifth place went to Greta Slagill of Dillsburg, York County.
This contest was supported by Good Food Inc., makers of Golden Barrel Baking Products. Ron Glessner of New Holland, Lancaster County from Golden Barrel presented the wining checks to the recipients.
The recipe for the first place sticky buns:
Pecan Sticky Buns
1 teaspoon sugar
1 packet active dry yeast
1/2 cup warm water
1/2 cup milk
¼ cup sugar
1 stick butter, melted
1 teaspoon salt
2 eggs, beaten
3 cups flour
1 stick butter
1 pint Golden Barrel TURKEY Brand Golden Table Syrup
2 cup sugar
¼ cup butter, melted
½ cup cinnamon sugar
2 cup chopped pecans
In large mixing bowl, dissolve sugar and yeast in warm water. Let stand for two minutes.
In separate bowl, combine melted butter, milk, ¼ cup sugar and salt.
Add milk mixture, eggs, and half the flour to the yeast mixture. Mix well.
Add remaining flour and stir until flour is incorporated.
Turn out dough onto floured surface and knead for eight minutes. Place into large greased bowl.
Cover and let rise for 1 ½ hours.
Preheat oven to 350O
In small saucepan, melt 1 stick butter.
Add TURKEY Syrup and 2 cup sugar. Bring just to boiling, stirring continuously. Remove from heat.
Pour evenly into two 8"X8" baking pans. Sprinkle ½ cup pecans over syrup in each pan.
On floured surface, roll dough into a large rectangle, approximately 15"X18". With a pastry brush, apply melted butter to surface of the dough. Sprinkle cinnamon sugar and then remaining ½ cup pecans over buttered dough.
Roll-up dough from long edge to form a long roll. Cut rolled dough into 18 slices. Arrange rolls, cut side down, in baking pans.
Bake at 350O F for 30 minutes.
Cool 10 minutes and then invert rolls onto serving trays.
