Harrisburg - The Incredible Angel Food Cake Contest on Sunday, Jan. 9, at the 2011 Pennsylvania Farm Show in Harrisburg was a family affair for winner Pam Foor of Everett, Bedford County whose daughter placed third in the contest.
Foor's own unique recipe of Lemon Poppyseed cake earned her $500 after winning at the Claysburg Farm Show. She has been competing in the contest for five years and this is the first time she placed.
The top three winners receive monetary awards and the top five receive ribbons.
Bethany Hoffman of the Beaver Community Fair in Snyder County had the second place entry and earned $250 with her Banana Nut Angel Food Cake. Courtney Foor won third place and $100 with her White Chocolate Raspberry Angel Food Cake. Kelli Kastronis from Sewickley Township Community Fair in Westmoreland County won fourth place with her S'mores Angel Food Cake, and fifth place went to Audra Fentermaker from the Clarion County Fair.
There were a record breaking number of entries in the Angel Food Cake Contest this year, with 82 divine cakes presented for the judges to taste and evaluate.
The judges with the sweet job included Deana Binner, Ena Bieber, Brandi Pratt, Lou Ann Good and Pat Krone.
The cakes are judged on multiple categories, first being flavor, including smell and taste. The second is inside characteristics of texture and lightness. The overall appearance takes into account the surface, size and color. The last area evaluated is creativity, topping, icing, and decorations.
The contest is sponsored by Pennsylvania Egg Quality Assurance Program and is conducted by the Pennsylvania State Association of County Fairs.
The winning Angel Food Cake recipe is listed below:
Lemon Poppy Seed Angel Food Cake
1½ cup egg whites
2 tablespoons lemon pudding mix
1½ teaspoon cream of tartar
2 tablespoons poppy seeds
2¼ cups sugar
1½ cups cake flour
2 teaspoons vanilla
1 teaspoon lemon extract
Sift and ¾ cup sugar. Set aside. Beat egg whites until frothy. Add cream of tartar. Beat until stiff. Add 1½ cup sugar at low speed, fold in extracts. Sift flour mixture and pudding over egg whites. Gently fold in poppy seeds. Pour in ungreased tube pan. Bake at 350 degrees for 35-40 minutes. Cool in pan.
2 cups powdered sugar
2 teaspoon lemon extract
2 ounces cream cheese
1 tablespoon poppy seeds
Beat until smooth. Spread on cooled cake. Sprinkle with seeds. Garnish with sliced lemons.
The Pennsylvania Farm Show is the largest indoor event in the nation, featuring nearly 6,000 animals, 10,000 competitive exhibits and 290 commercial exhibitors. The show runs Jan. 8-15 at the Pennsylvania Farm Show Complex and Expo Center in Harrisburg. Admission is free and parking is $10.
